Our son-in-law served his mission in the Caribbean, on a Dutch-owned island called Surinam. They love spicy foods there and Brian learned to love spice. This was one of their staple dishes. Brian taught me how to make it. You can make it as mild or hot as you wish. He is nice. When he makes it for us, he tones down the heat.
Surinam Rice and BeansOil in large fry pan, heat and add:
1 onion, cut up
1 green pepper, cut up
Cook until softened. Add:
2-3 chicken breasts, cut up
2-3 hot dogs, cut up
Saute until the chicken is done. Add:
Minced Garlic Saute' all together. Add Cayenne pepper to taste and soy sauce. Cook. Add:
2 cans undrained pinto beans
Cook all together.
Serve over hot rice.
