Chicken Tikka Marsala

I tried an amazing recipe for dinner tonight. This one is definitely going on our meal rotation. I would re-post the recipe, but the pioneer woman does an amazing and thorough job, so here is the link. The only things that I personally would change when I make it next time is to add a little less fresh ginger than it calls for and maybe try using coconut milk rather than heavy whipping cream. But ooooh man. It is my new favorite. Thanks to my friend who made it for us a couple of months ago, I've been dying to try it ever since! It didn't disappoint.

Ya, I'm planning on making this one once we all get our appetites back. Yum! I love Indian food.

We just had this for dinner. It was yummy. I didn't have cream (I thought I did, but it had gone bad) or coconut milk, so I used canned milk. It was fine, but I really like your idea of coconut milk. That would bump it up a notch. Be sure to spray the cooling rack well with Pam. I didn't and Daddy spent 15 minutes scrubbing it. It took me back to that Indian restaurant in Provo. We had lots of fun times there! Oh also, the turmeric makes the rice really pretty, but it stained the pan. Poor Daddy couldn't scrub it off. I'm sure it will come out next time we use the rice cooker.
