Crab Pinwheels

 Here is my new favorite lunch!  This is a great air fryer recipe.  But you could make them in the oven too.  They are so delicious!

Crab Pinwheels
2 flour tortillas
Cream cheese spread
Imitation crab
Green onions
Softened Butter
Sweet Chili Thai Sauce

Spread the tortillas with the soft cream cheese.  Pull apart the crab and put it all over the cream cheese.  Using scissors snip green onions all over the crab.  Roll up the tortillas and spread the outside with the softened butter.  Slice into pinwheels.  Air Fry at 400 for about 4 minutes.  Serve them with Sweet Chili Sauce.  

There are many different brands, but this is Sweet Chili Thai Sauce.

Egg Rolls


The picture is supposed to tempt you.  This one doesn't  This was the first time I made them. The recipe makes three rolls.  The first two were underdone, making it impossible to roll them.  They were just too soft. This one, though it tasted great, was a bit overdone.  I have made this recipe twice since and got them just right.  They really are delicious.

 I was so excited to see that Nadiya Hussein has her own cooking show.  Nadiya was a contestant on The Great British Baking Show.  I really liked her on that, so was so glad she got her own cooking show.  She is of East Indian descent.  She now has her own show with Netflix.  Her emphasis is on easy to prepare meals for families. I have watched a couple of episodes.  This recipe most enticed me, so I gave it a try.   I've changed it a little- making the instructions more American (she is British) and to my liking.

Egg Rolls   This recipe makes 3 rolls
6 eggs
1 T. dried parsley
1 tsp. garlic powder
1/2 tsp salt
1/2 tsp pepper
oil
6 small tortillas
12 or so sliced black olives
 6-8 mushrooms, sliced
Other ingredients as desired: grated cheese, green onion, tomato, ham, etc.
6 tsp. or so of sundried tomato paste

Crack the eggs in a bowl , add the parsley, garlic, salt and pepper.  Whip together.  Spread some of the tomato paste on each of the three tortillas.
Heat a small frying pan and then add oil.  Put about 1/3 of the egg mixture in the pan.  Scatter some of the olives and mushrooms and any other vegetables of choice (and cheese) over the eggs.  
Quickly put a tortilla, tomato side down on top of the egg.  Press down with a spatula while it cooks.  Cook for about 30 seconds, then flip it all over and cook on the other side for 30 seconds.
Take the pan off the heat and put the tortilla/ egg on a plate.  When cool enough to touch, roll it all up.  Cut in half. 



These can be eaten for breakfast, served hot or as a sandwich for lunch, served cold.  I found that each tortilla took a bit longer than the 30 seconds.  They have to get browned and crispy to roll and slice properly.

Kneaders Copycat Tuna Melt

My friend and I went to lunch at Kneaders.  We both ordered the tuna melt.  It was so delicious that I came home and tried to recreate it at home.  Honestly, I think my version was even better because I made the tuna salad more to my liking. I have since made it many times.  I love this sandwich!  This recipe makes 2 sandwiches.

Tuna Melt
Really good wheat/seed bread
1 can albacore tuna, drained and flaked
1 dill pickle, diced fine
Mayonnaise
Sliced cheese of choice: Kneaders uses cheddar; provolone is good
Whatever else you like in your tuna salad: hard boiled egg, dill, celery, etc.  Kneaders uses a lot of dill
Soft real butter (essential)
1 avocado, smashed and salted
Thin-sliced tomato, optional
Drain and put the tuna into a bowl.  Flake with a fork.  Add the mayonnaise and pickle and whatever else you would like.  Mix well.
Heat a frying pan or a griddle.  Generously butter one side of one bread.(It is very popular these days to use mayonnaise on the outside of the bread on a grilled cheese in place of butter.  I tried it on this and it was NO WHERE NEAR as good as real butter.)  Put it butter side down in the hot pan.  Top with a generous amount of the tuna salad (1 can tuna makes 2 sandwiches.)  Put on the avocado and tomato.  Top with two slices of cheese.  Butter one side of another piece of bread and put it butter side up on the cheese.  Grill until browned.  Turn over and grill the other side until browned and the cheese is melted.  You can also make this in a panini press.

Mom's Crab, Cheese, and Tomato Sandwich

If you asked me what my favorite sandwich is, I would have a hard time choosing because I love a good sandwich.  But this is definitely in the top five.  It is easy to make and always, always makes me think of my parents because they made them often. 
Crab, Cheese, and Tomato Sandwich
1 slice good bread
Artificial Crab meat (or you could use real, I'm sure)
1 slice cheese of choice (my parents always used Swiss, but any cheese will do)
Sliced Tomatoes
Salt and pepper

Put bread under the broiler until browned.  Take out of the oven and turn it over.  Layer the crab and cheese on top.  Put back under broiler until the crab is warmed and the cheese melted.  Remove from oven and put sliced tomatoes and salt and pepper on top.  Yum!
