Boursin Tortellini

 

Boursin Tortellini

1 Boursin Cheese round- garlic and herb flavor
1 10 oz. container cherry tomatoes
2-3 cloves garlic, crushed or minced
1 T. olive oil
Salt and pepper to taste
2 T. sliced green onion
1 cup fresh basil
20 oz package of frozen tortellini
2 large handfuls of fresh spinach

Preheat oven to 400.  Place the cheese in the middle of a ceramic baking dish.  Add the tomatoes and garlic, then drizzle with olive oil.  Season with salt and pepper.  Add the onion and basil.  Bake for 30-35 minutes.  
Prepare tortellini according to package instructions.  
Remove the cheese from the oven and crush with a potato masher. Mix everything until well combined.  Drain the pasta and add it and mix again.  Serve.

You can add chicken or sausage if desired.

Crockpot Tortellini

 This dish was advertised as being the best recipe on the Internet.  Of course I had to try it.  It was delicious.  But I added sweet sausage and seasonings that it didn't call for.  It was really, really good and I will do that again.  I will be making this a lot as my husband loved it and it was so easy.





Crockpot Tortellini

1 bag of frozen tortellini

1 small bag of fresh spinach

2 cans Italian style diced tomatoes

1 box chicken stock

1 block of cream cheese, cut up

1 lb. sweet sausage, cooked (optional)

Garlic salt, Italian Seasoning, and salt and pepper to taste.

Put all except the tortellini in a sprayed crockpot.  Cook on low for 5-6 hours.  If possible, don't put the tortellini in until the last couple of hours so that it doesn't get mushy.    But if you aren't going to be home, you can add it at the start.   A yummy, easy meal.

Allison's Tortellini Soup

 Browsing through my sister Patty's cookbook, I saw this recipe for Tortellini soup.  It is Patty's daughter, Allison's recipe.  Allison says it is her family's favorite soup.  So I had to try it!  It is delicious !


Allison's Tortellini Soup

1 lb. mild sausage

1 cup water

1/2 cup apple juice

1 tsp. basil

1 tsp. oregano

2 cloves garlic, minced

1 onion, chopped

4 cups beef broth

4 carrots, chopped

1 28 oz. can crushed tomatoes (I used diced)

1 cup diced zucchini

1 green pepper, chopped

4 T. parsley, chopped

8 oz. (about 2 1/2 cups) tortellini

Fresh grated Parmesan cheese

In a large soup pot, brown sausage.  Add chopped onion and garlic and cook until tender.  Add water, broth, apple juice, carrots, tomatoes, basil, oregano, zucchini, parsley and green pepper.  Simmer until vegetables are tender.  Add the tortellini and cook about 10 more minutes.  Serve with grated Parmesan cheese on top.
