Crockpot Greek Chicken

I got this recipe from Shonna. I think she got it from Michelle. Anyway, I LOVE this recipe for a busy day. I literally can have dinner on and cooking in five minutes. I buy chicken thighs in the cheaper family pack- nine or ten to a pack. I divide them between two quart freezer bags and label them "Greek Chicken". It's perfect for the two of us. Then I just put the bag of frozen chicken in the crockpot with the other ingredients. You can use any chicken pieces, but I recommend ones with the bones still in as it adds a lot of yummy flavor.
I half the recipe for two people. Here's the recipe:
4- 6 potatoes, scrubbed and quartered
2 lbs. chicken pieces
2 large onions, quartered
1 whole bulb garlic, minced (I use the stuff from the jar)
1 T. dried oregano
1 tsp. salt
Fresh cracked pepper to taste
Olive Oil
Place potatoes in the bottom of a well sprayed crock pot. Add chicken, onions and garlic. Season and drizzle generously with olive oil. Cook on high 5- 6 hours, low for 9-10.

This IS a good recipe, but it needs LOTS of olive oil and garlic or it can be dry. And just to clarify: I think Brian and I recommended this recipe to the Cameron's from a recipe book that we both have. :)

You had me at "crockpot." I love a good slow-cooker meal!!
